Chia Pudding
Chia Seeds, Almond Milk, Vanilla Bean, Lucuma, Cinnamon, Blue Berries, Almonds, Matcha, Honey, Bee Pollen
Yields: 4 servings (about 4 cups)
Pudding Ingredients:
1 cup chia seeds
3 cups almond milk
1 tsp cinnamon
2 tbs lucuma powder
1/4 tsp vanilla bean
Toppings:
1 cup blueberries
1/2 tbs matcha powder
1/2 tbs bee pollen
1/2 cup sliced toasted almond (unsalted)
1 tbs honey
Pudding Instructions :
In a bowl or container mix chia seeds, almond milk, cinnamon, lucuma powder and vanilla until all ingredients are integrated. Refrigerate for 2 hours (mix every 30 mins). Mixture will congeal naturally into a pudding
Serving:
In a small bowl put a cup of pudding. Top with almonds, blueberries, pinch of matcha powder, pinch of bee pollen. Drizzle honey over.
The pudding is good for up to 1 week refrigerated. Enjoy!
